Russian Potato Salad
Ingredients:
2 Lbs Potatoes
1 10 oz Pkg Frozen Peas & Carrots
2 Med Beets
½ Cup Mayonnaise
2 Tbsp White Vinegar
1 Med Onion, Chopped
2 Tbsp Capers
1 Tbsp Sugar
Salt And Pepper To Taste
Boil and skin potatoes and beets. When cool, dice both into ¼ inch squares. Prepare frozen vegetables according to directions on the package and allow to cool. Combine all ingredients together and chill. The salad is always better if made the day before.
